Whether it be for healthy habits or traveling on a budget, food prep is always a part of smart planning. This protein ball recipe is a ( J+G ) favorite for road-trip snacks. They are filling, locked and loaded with protein and perfect for grab - and - go meals. Back in college, we found a similar Peanut Butter Protein Ball recipe and have been making and adapting the recipe ever since. From slopeside to mountaineering these protein balls are the perfect power snack.
1 cup old fashion oats
1/2 cup ground flaxseed meal
1/2 cup creamy peanut butter
1/3 cup honey
1/3 cup raisins (optional)
1/3 cup mini semi-sweet or dark chocolate chips (chopped if not mini)
1 tsp vanilla extract
In a large mixing bowl, combine oats, flaxseed meal, peanut butter, honey and vanilla. Mix just until crumbling consistency. Add in raisins (optional) and chocolate chips. Mix, or knead with hands, until all ingredients are combined.
Shape into 1 1/2 inch ball pieces. Store in airtight container using wax paper to separate layers (if need be). Keep in refrigerator or cooler until you head out into the wild.
